Winter Vegetables Curry

I love warm food on cold, winter days.
Makes me feel all cuddly inside.
Sometimes, though, having soup all the time can get a little boring.
Especially, if you only have one type of soup as your go to, for us that's "noodle soup."
That's why this dish takes the cake!
Here's what I love about this dish...other than the flavor...and why it's the perfect dish for winter time!!
1. The Curry Powder
The curry powder has ginger, turmeric, cumin, coriander, chili, and pepper. These ingredients add a lot of antioxidants to the food but also provide a bunch of spice. Spicy foods can kill up 75% of bacteria in food so the spicier the better!
2. Coconut Milk
The coconut milk offers a ton of health benefits such as electrolyte balance, immune boosting, and antioxidants.
3. Garlic
I love garlic. If a recipe asks for one clove, I add 6! It is amazing for colds and flus and it helps with mucus build up. I use it in my nasal decongestant. Adding this with the spice from the curry powder, really helps open you up and make you less congested.
4. Potatoes
We actually don't grow potatoes ourselves. We have for personal use but not as the farm. They take a long time to grow and too much work that we don't have the space and capacity to grow as a farm. But they are a great vegetable to have around. Not only do they provide great carbs, energy, and bulk to any dish, they aide digestion, decrease inflammation, and improve the immune system
5. Turnips
Turnips are good for fiber...they keep you regular and allow things to pass in a good manner. Enough said!
6. Radishes
We LOVE radishes. They are definitely one of those underdog veggies. We love the bright color of our crayon radishes because the color means they are high in anthocyanins which help with blood flow.
7. Carrots
Carrots contain 73% of our daily requirement for vitamin a which helps with eyes, skin, and immune system. There's that saying "always eat your carrots!" because it's true!
