Simmered and Roasted Turnips

Turnips are another funny vegetable for people.


They're not a staple you generally see in people's houses.


And a big reason why you don't see them there is because chances are they don't know how to cook them.


For New Year's Eve, my mom always boiled turnips and then mashed them like potatoes...as a kid...YUCK!


At least that's what I remember...same reaction to Brussels sprouts as well but I love those now. I'll have to try my mom's turnip recipe now as an adult...maybe I'll see what she saw!


But just me playing around in the kitchen, I have found the most amazing way to eat turnips.


And yes my kids eat it too!!


Turnips are spicy like radishes. You can eat them raw but they are way better roasted!


Cooking them like that takes away the spice and gives them a nice, crisp flavor.


The greens are edible too!! I always hate to see a big bunch of turnips, or radishes, or even carrots, with their tops on and people just cut them off and toss them to compost. Eat those too!! The tops are a bit bitter so the coconut sugar in the recipe really counteracts that and gives them a nice, juicy flavor!


Here's how I like to eat my turnips. You can also, instead of roasting the turnip root itself, try adding it to the greens and let them simmer as well.
