I saw this posted in one of my Facebook groups and thought it sounded delicious!
So I gave it a try.
And guess what??
It is!!
This is adapted to fit my dietary restrictions but you can add green apple to if if you'd like!
My favorite ingredient in this is the red amaranth that we grow here at the farm!
Yoga Rice Recipe
Ingredients:
1 cup cooked rice
1lb grilled chicken
1/2 cup green onion
1/2 cup chopped pecans
1/4 cup cranberries
5 garlic cloves
Large handful of red amaranth
Dressing:
3 tbsp apple cider vinegar
1 tbsp mustard
1 minced garlic clove
1/2 tsp thyme
1 tsp coconut sugar
1/3 cup grape see oil
Salt & pepper to taste
Instructions:
Cook the rice and grill the chicken. Saute the garlic in 3 tbsp of grape seed oil until crisp. Chop the red amaranth and add to the garlic. Saute for about 2-3 minutes until wilted. Add to the rice
In a small bowl, mix together all the ingredients for the dressing. Drizzle it over the rice. Stir rice, dressing, and amaranth until mixed through. Top with grilled chicken.
