Mango Lime Salad Dressing

It's a struggle to get kids to eat vegetables.


Not just vegetables, but green, leafy ones!


And with it being early April, that's all that's coming off the field!!


But, I found a trick they can't say no to!


Salad dressings!!


You can doctor up those greens with all sorts of salad dressings to get them to at least try them!


Watch Juna and I make this awesome Mango Lime Salad Dressing that she scarfs right up!!!




Here is the recipe!



Mango Lime Salad Dressing

My kids would turn into a mango if they could. They love them so much. Only natural to add it to their veggies to get them to eat more!


Ingredients:

1 Cup Fresh Mango or Defrosted Frozen

1 Tbsp Lime Juice

1 Tsp Mustard

1 Tsp Coconut Sugar

1 Tsp Himalayan Salt

1/4 Cup Rice Wine Vinegar

1/2 Cup Oil (Avocado, Olive, Grapeseed)


Steps:

Mix all ingredients in a bowl except mango. Set aside. Add mango to a food processor or high speed blender. Blend until smooth. On low speed, slowly drizzle all ingredients until blended. Serve. Store in refrigerator for 1 week.
